The AG: Bistronomy in Les Halles

This beautiful location is one of Paris’ top restaurants and run by a chef who will be talked about for years to come. This restaurant is a purveyor of the ‘bistronomy’ (gastronomic bistro) trend which is highly fashionable in Paris at the moment.

It is decorated in a style that combines tradition, modernity and a sophisticated lighting scheme.

AG and Alan Geeam – Portrait of a chef

Alan Geeam, chef and manager, is ambitious and self-taught, having initially learned Mediterranean cooking from his mother. Born in Liberia to American-Lebanese parents, he lived in Lebanon and the United States. His life’s journey also took him to Prague and Milan before he arrived in France with just 200 francs in his pocket and a determination to realise his dream – to be a head chef in Paris.

His approach is not to simply reproduce classic French recipes that have remained unchanged over time, but to add his own exotic touch to them. “Cook with a smile”, he says to his team, “and your food will be better.” He loves to please. He dislikes routine and is constantly developing new ideas. He is a born master chef with passion, dedication and the highest standards. Being better than yesterday is his compulsion.

Creativity and accessible gastronomy

In this video, Alan Geeam presents his appetiser (shortbread, basil-infused whipped cream, hazelnut) and prepares 2 main courses and a dessert:

  • Dumplings with foie gras, peanut powder, butternut, clementine (or mandarin), foie gras foam and shiso leaves
  • Savarin, pineapple, mango, passion fruit, almond biscuits
  • Spinach fried in olive oil, risotto-style Venere rice with cream and Parmesan, grill-fried and oven-finished lean filet, stir-fried razor clams, salicornia sauce, red onions, borage flowers, coffee leaves and grated lime

The Menu

Starter, main and dessert (€30 lunch / €39 dinner). Lunchtime – starter + main or main + dessert (€24). The menu is short, comprising 3 starters, 4 main courses, a cheeseboard and various desserts.

But if you want to be blown away, our ‘carte blanche’ menu is available for €75. This gastronomic journey is ever-changing as it is based on seasonal products and includes: Aperitif, starter, main course and dessert with wine/food pairings.
